Restaurant STYLE Fried Rice

Have you ever gone to a Chinese restaurant or a Asian spot that has that unforgettable fried rice? You wish you didn't spend so much on the restaurant, but the food is just too good!! I feel you... The rice is something so simple yet so good. And you don't know where you would even start if you were try to recreate it. WEELLLL, that is why you have me duhh. I have finally replicated a Asian inspired FRIED RICE!! ON top of that this recipe is going to be a lot healthier for you, knowing exactly what's going into it! This recipe is great for when you have cravings or if you're trying to impress someone or a group of people of your culinary "skill" ;)
Ingredients:
- 3 cups of cooked white rice ( I use jasmine but any rice is fine!) (cooled)
- 1/2 of a carrot
- 1/2 of a white onion
- 2 cloves of garlic
- 1/2 stick of celery
- 1 Green onion for garnish
- 4 Tbs of vegetable oil ( Or any high smoking point oil)
- 4-5 Tbs of Soy sauce (Gluten Free Soy sauce is GREAT in this recipe)
- 2 eggs
Directions:
1.) FIRSTLYYY! A very crucial part is to make your rice a day ahead and placing it in the fridge to cool! When your rice is cold it is less likely to get mushy and sticky when cooking it. Restaurant's secrets is that they usually use the rice from the day before, so they already have the cold rice on hand. If you do not have time for this step you can make it and place rice in the fridge for a few hours to cool.
2.) When preparing all your ingredients to make the rice, chop the onion, celery, carrot and garlic into a mince. Make sure they are all around the same size mince, that way they all cook evenly.
3.) To cook this rice you can use a Asian wok or a steep pan. Turn your heat on medium to high heat. Place 3 Tbs of vegetable oil (Or ANY high heat oil to the pan) When the oil is heated through you can place the celery, carrots and onion in. Let the vegetables sautee for about 2-3 minutes.
4.) When onion is somewhat translucent and the celery and carrots are semi-soft you can add the minced garlic. BUT!!! Do not leave garlic alone! Stir around constantly until you can smell the aroma.
5.) At this point, when you smell the garlic you can add the cold rice that you have. Place the last Tablespoon of vegetable oil on top of the rice and start to combine rice and vegetables until they are even throughout.
6.) When you see the rice is warmed through you can make a little well in the middle of your pan or wok and crack in your two eggs. Scramble the eggs and mix rice with the mixture in the middle so the egg in even throughout.
7.) Once egg is combined you can add the soy sauce to the rice and combine. At this point you can taste the rice to see if you would like more soy sauce or even if you wanted to spice up your life by adding a little siracha to the dish. It is totally up to you!
8.) Once rice is just right for you. You can garnish with green onion, serve and ENJOY!! That is your restaurant style Fried Rice!!
