Tired of eating the same old banana bread? Using all kinds of different nut and even chocolate chips can get boring! So, today I give to you, my famous Coffee Cake Crumble Banana Bread. It's easier than most banana breads because all you have to do is throw it all together, transfer into a pan, top with crumble and pop that baby into the oven for about 60-65 mins, let the oven do the work!
Banana Bread
3 large bananas
1/3 cup melted butter
1/4 cup brown sugar
1 eggs
1/2 cup granulated sugar
1 1/2 cups flour
1 tsp baking soda
pinch of salt
1 tsp vanilla
Coffee Cake Crumble
2 tsp cinnamon
1/2 stick of butter (chilled & cubed)
1/2 cup of flour
1/4 sugar
2 Tbs brown sugar
1 tsp vanilla
4 Tbs pecans (optional)
Instructions:
Banana bread mixture
1.) Preheat oven to 350 degrees F
2.) Mash bananas into a medium to large mixing bowl. add your granulated sugar as well as brown sugar. When all combined you can add your egg and mix until mixture is one.
3.) Now you can add your salt, baking powder and vanilla to the mixture and stir.
4.) Finally, your last steps are to add your butter and flour last. Mix this mixture for about 30 seconds try to get all lumps out of the mixture. You may have lumps from the banana and that's perfectly okay!!
5.) Grease a loaf pan with about 2 Tbs of butter then add the banana bread mixture into the pan.
Crumble for the top of bread
1.) With a cold stick of butter cut the stick in half and save half for other uses. Cut in about four sections and make into about 1 inch pieces. Add into a small mixing bowl. You may add your cinnamon at this point.
2.) Add your granulated sugar and brown sugar. Add your flour, vanilla and pecans if you wish to add nuts.
3.) At this point you want to get your hand dirty, mash up the cubed butter and stir the mixture together with your hands. DON'T make the butter pieces too small because that's the good parts you're going to want to eat! TRUST ME!!
4.) When the mixture is combined you want to add the big pieces of mixture with butter onto the bread as well as the nuts. You may have some left over crumble that has no butter pieces on the bottom of the bowl, you can just discard that.
5.) Pop into the oven for about 60-65 minutes and let the oven do it's magic!!
6.) When the bread comes out of the oven, let it rest for about 10-15mins before serving!!
7.) Eat and Enjoy!!
