Easy Authentic Vegetarian Tacos

I recently became vegetarian again.. and by 'again' I mean I moved down to TX and took a liiiitttllleee break. I just want to let everyone know that TX BBQ.... is AMAZING lol. I am not telling anyone to become vegetarian or to not eat meat because before you change your diet you should consult your doctor. I chose to become vegetarian because I feel most comfortable with that lifestyle. But, enough of this tangent; I woke up a couple of days ago and was really hungry. I had tortillas, plantain, sweet potato and some eggs. So, I got to brainstorming and thought..why not put it all together? So, that's what I did and let me tell you, it was GREAT! Below is the recipe and I really advise you give it a try!!


Ingredients:

- About 1/4 of one sweet potato

- Salt & Pepper to taste

- 1/2 cup & 2 Tbsp of Vegetable oil

- 2 corn tortillas

- 1 egg

- 2 Tbsp of pepper jack (You can substitute with your favorite cheese)

- About 2-3 slices of plantain (GREEN PLANTAIN)


Directions:

1.) Preheat your oven to 350 degrees F

2.) Wash and chop 1/4 of the sweet potato, chop the sweet potato in about 1 inch pieces. Place potato pieces on a non- stick pan. You can add salt and pepper to taste and 1 Tbsp of vegetable oil to the pan. Toss together until the pieces are all covered and put in the oven for about 20-25 minutes.

3.) While sweet potato is in the oven you can start to cook the plantain. Peel plantain and on a basis, slice in 1/2 inch pieces. Heat a large sauce pan with 1/2 cup of vegetable oil. When oil is hot you can place plantain in pan and allow them to fry.

4.) Flip plantain to other side after about 2-3 minutes. Take out and pat oil off with paper towel. You can take a mug and using the bottom smash the plantain until it is flat. Put back into the pan and fry again for about 3-4 mins. When done frying pull out of fryer and place of paper towel. Add salt on top and your plantain is finished!!

5.) At this point your sweet potato should be done or near done, so you can pull them out of the oven. You can grab a small none stick pan and scramble your egg. Add some cheese and add your pieces of sweet potato into the mixture. When finished you can put to the side. IN THE SAME PAN. You can heat your tortilla in the pan until you have brown crispy pieces on each side.

6.) Final step is to assemble!! Take your cheesy egg sweet potato mixture and add to the tortilla. On top add your plantain. What I did and what you can do is to add dressing on top, this is optional but I added some ceaser dressing and a drizzle of sriracha.

7.) LAST LAST STEP is... To ENJOY!!! eat your great creation! '
